Claire Sellar-Elliott


Claire left London’s West End in 2012 and her career as a partner in a law firm and property developer, after a terminal liver cancer diagnosis, to escape to the country with her four young children.  Meeting her illness head on and having undergone over 35 operations in 5 years (including a live donor liver transplant from her brother who in 2017 was the first person to get married at The Jubilee Inn since 1936!) Claire’s mantra is “never give up”.

Claire and her family set about refurbishing a dilapidated old roadhouse into a luxurious family home and exclusive country hospitality business.  Now living on Exmoor where she used to spend her childhood holidays riding (with the occasional jaunt to London for medical treatment, hell-raising and legal things!), she makes the most of life.  In spare time, Claire enjoys family, friends, food, fundraising and generally likes to ensure that she focuses on writing at least one chapter of her book every month!  Not one to suffer fools gladly, and on occasion a little outspoken, Claire puts her existence today down to remarkable fortitude, supported by the change of pace to a more relaxed ‘Devon-Time’ lifestyle, fresh country air and the essential ingredient of both the laughter and love of her family.

Sam Salway

sam-the-jubilee-inn-1Sam joined The Jubilee Inn in March 2015 as Executive Head Chef.

Sam grew up in the Quantocks in Somerset and spent many years running the kitchens of top restaurants in Paris and the South of France before returning to Somerset in 2015 to both consult with business and as a Chef Lecturer at the training restaurant of West Somerset College in Minehead.

Utilising the best of local seasonal produce, with a dash of the classic French touch – his exquisite menus have proven to promote the business and this year alone have secured 2 Gold and 1 Silver Taste of the West Awards, in addition to securing a ranking at No. 6 in the Sunday Times Top 50 Best Value Hotels (June 2017).

The determination to offer outstanding value for money on dishes, which would not seem out of place on the menus of some of the best restaurants in the UK, has given their guests the opportunity to enjoy Sam’s passion for fine dining in every dish.

Sam enjoys Fishing, travelling, family, friends and anything French!
